Wanting a project truck

Work for a good company and dont plan to leave any time soon. That being said id like to by a “Project truck” to restore and show. Thinking about a daycab 359/379. Anyone else start a project truck for fun on their days off? Any ideas on models or easiest to find parts to restore. Would be nice to also know a good place to look for an older truck. Truck paper seems alright but not too many projects. Facebook market place looks fine for no paperwork rebuilds.
