Posting my prep because I want to put it out into the universe that I’ve been spending way too much money on food, I’d like to have more energy, I want to cut back on my meat consumption and I struggle with eating three balanced meals each day.
When I don’t have easy and tasty meals on hand I end up doing dumb things like not eating all day and then doing a large meal out at 9pm because I’m starving. I got the nice containers and it’s time to make a change. I can systematize things and have a better routine. Sundays are the day to get ready for the week, if I ‘don’t have time’ I will not let my perfectionist tendencies sabotage me. I will still try to throw together what I can.
In the past I haven’t stuck to prepping because I love to have lots of variety and would end up being sick of the meals by the third day. But I’m a good cook and I will keep the momentum going by choosing meals that I like. I’m excited to dive into fun meatless options.
I started with a simple taco-esque meal of rice, beans, corn, onion, cilantro, tomato, and avocado with a chipotle ranch dressing. Not pictured but I also did some overnight oats for breakfasts. Thanks for all the cool photos and info, this sub is awesome.
